
4 green bananas
5ml/1 tsp ground hot pepper
Salt to taste
Groundnut or vegetable oil for deep frying
Peel the banana and cut length ways. Deep-fry the banana until golden brown, drain on greaseproof paper and sprinkle with
the pepper and salt. Keep warm while you prepare the salad.

3 medium fresh tomatoes, finely chopped
25g/¼ cup spring onions, finely chopped
45ml/3 tbsp groundnut oil
Juice of 1 lemon
5ml/1 tsp black pepper
Salt to taste
Put the chopped tomatoes and onion in a bowl and add the black pepper. Mix the lemon and the oil in a small bowl and add to
the salad. Add enough salt to taste. Serve cold with the fried bananas.
